Enjoy Your Auntie Arnie's Adobo with This Fresh Tomato Salsa

One of our favorite ways of serving Auntie Arnie’s Chicken and Pork Adobo is with steamed white rice and a freshly made tomato salsa. The clean, crisp flavors of this simple side dish perfectly complements the rich, savory taste of the beloved Filipino adobo.


We make our salsa using ripe tomatoes and red onion. It is seasoned the traditional way, with cilantro and lime juice, plus some fish sauce for added flavor.

Fresh Tomato Salsa Recipe


4 ripe tomatoes, seeded and chopped
½ of a small red onion, sliced thinly
4 sprigs of cilantro, chopped
2 Tbsp. Thai fish sauce
1 Tbsp. fresh lime juice


Combine all ingredients together in a small bowl.
Refrigerate for an hour or so to allow flavors to blend.
Serve alongside Auntie Arnie’s Chicken and Pork Adobo.


Auntie Arnie’s Tips:

When you store this salsa in the refrigerator for a few days, simply drain the excess liquid released by the tomatoes before serving.

If you would like a slightly spicy salsa, add some chopped jalapeño peppers to the mix.
